With the last of the Winter sweetness – carrots are the perfect base for a delicious and warming soup this Winter. Here’s a recipe you will love – super easy and embracing all the flavours of a hearty Winter soup. Filling and warming with just a dash of cream!

Ingredients
500g carrots (peeled and cut into thin slices)
1 large brown or white onion (sliced thinly)
60 g butter
1 tablespoon of plain flour
5 cups of chicken stock
¾ cup of cream
Salt and pepper to taste
Chopped chives to serve
Method
Grab a soup pan and place over a low heat.
Then heat the butter in the pan and slowly add the thinly sliced onion and carrots.
Stir over low heat until the onion is tender, make sure you don’t let them burn or brown.
Add the flour and stir until combined. Remove the pan from the heat.
Slowly add the stock and stir everything in together until it is all combined.
Make sure there are no lumps.
Place the pan over the heat once more and continue stirring until the mixture boils and thickens.
Ensure you stir continuously as you don't want the soup to catch on the bottom of the pan.
Simmer in this manner until the carrot is tender.
Use a food processor or blender to process the soup in small batches until it is all smooth and velvety.
Return the soup to the pan and slowly stir in the cream.
Stir the soup until it is heated through once more.
Season to taste with salt and pepper.
Serve the soup sprinkled with the chopped chives - straight from your garden.
